Ol Sorse Bata (Elephant Foot Yam Mustard Paste)


  It is very popularly known in all over India that Bengalis are crazy about food—- be it some kind of fishes or sweets .There’s a lot of variety available. This age old “OL SORSE BATA” is a traditional Bengali dish which is one of the favourites in a Bengali meal. This can lift up a boring meal in a second. This takes very little time to make and is completely a treat for our taste buds as it gives a variety of flavours.

So today, I am sharing with you the recipe of “OL SORSE BATA” .

  • Ol (Elephant Foot Yam)
  • Kalo Sorse (Black Mustard seeds)
  • Salt
  • Sugar
  • Chillies
  • Grated Coconut
  • Mustard oil
  • Garlic (optional)



Firstly, cut the Ol (Elephant Foot Yam) into small pieces and wash it properly and boil it with a pinch of salt in the pressure cooker till it gets tender.

In a blender, add 2-3tbsp of sorse (black mustard seeds) and garlic pieces in it and blend it once till you get a coarse paste. Add 2-3 chillies and the boiled ol in it and also add half a tbsp of salt and one tbsp of sugar and blend it . When you get a thick paste then add the grated coconut in it and mix it properly. Transfer the paste to a bowl and add 3-4tbsp of mustard oil and mix it well and serve it hot with rice.
